The patisserie/chocolaterie 'Sucre' in New Orleans that makes these cookies along with other confections is one of the locals in my WIP.
It's also a daily occurrence for me to go onto the Sucre website and pine for all that I cannot have that day.
I wish I could make macaroons at home, but my oven is from the 70s and macaroons are too tempermental- they would drop.
However- I CAN watch the pastry chefs at Sucre make theirs and prepare for my baking future :)

those look delicious! aren't maccaroons made with coconut? i'm deathly allergic to coconut of any kind so i need to steer clear but, i can drool over your pictures of them.. yumm!
